cottage cheese loaded potato
Power up your performance with these protein packed baked potatoes.
Serves 4
Ingredients
4 medium potatoes, washed, peel on
1 tbsp extra virgin olive oil
¾ cup cottage cheese
3 tbsp grated tasty cheese
3 tbsp roasted peppers, diced
3 tbsp spring onions or chives, plus 1 tbsp for garnish
¼ tsp smoked paprika, plus a sprinkle for garnish
Cracked black pepper
Method
Preheat oven to 200°C.
Place potatoes on a lined oven tray. Prick each potato with a fork about 10 times.
Drizzle potatoes with oil and rub the oil over the potatoes to cover.
Bake in the oven for 50-60 minutes or until golden brown and a fork slides through easily.
While potatoes are cooking, in a medium bowl, mix together the cottage cheese, tasty cheese, peppers, spring onions, paprika and pepper. Set aside.
When the potatoes are cooked, remove from the oven and place on a chopping board. Allow to sit for a couple of minutes.
Use a fork to diagonally poke holes in the top of the potato until it fluffs up and the inside opens up, without it breaking in half.
Fill the potato with ¼ of the cottage cheese filling.
Garnish with extra spring onions and a sprinkle of paprika. Enjoy!
