Boost your gut health with this hearty potato salad.

 
 
Healthy Potato Salad Jemma O'Hanlon Dietitian
 
 
 
 

Serves 4

Ingredients

2 large potatoes, washed, peel on, cubed

½ red onion, diced

4 spring onions, finely chopped

2 sticks celery, finely chopped

2 tbsp fresh parsley, chopped roughly, plus 1 tbsp for garnish

½ cup plain Greek yoghurt

1 tsp wholegrain mustard

Cracked black pepper

Dash tabasco sauce

Method

  1. Steam potatoes for about 10 minutes or until tender.

  2. In a medium bowl combine the onion, spring onions, celery and parsley.

  3. In a separate small bowl combine the yoghurt, mustard, pepper and tabasco sauce.

  4. Add the steamed potatoes to the onion mixture, stir through, then stir in the yoghurt mixture.

  5. Place in the fridge and serve chilled, or if preferred, enjoy warm. Garnish with fresh parsley.
