Crunchy granola clusters

 
 
 
 
 
 

Serves 4

Ingredients

1 cup rolled oats

2 tbsp wholemeal flour

2 tbsp shredded coconut

4 tbsp brown sugar

3 tbsp seeds (I chose pepitas, sunflower and chia)

½ tsp cinnamon

¼ tsp salt

2 tbsp melted butter or macadamia oil

2 tbsp water

Method

  1. Preheat oven to 160°C fan forced. Line a loaf tin with baking paper.

  2. Place all ingredients in a medium bowl and stir well to combine.

  3. Pour mixture into the tin to cover the bottom in one full layer, approximately 1cm in depth. Use the back of a glass to press down on the mixture so that it is compact.

  4. Bake in the oven for 30 minutes. Remove and allow to cool completely. Break up into small pieces (choose the size based on your preference) and serve with Greek yoghurt and fresh fruit.

    TIP: This recipe makes a wonderful gift - place granola in a jar and tie a pretty ribbon around it or make it fresh and serve with fresh fruit and yoghurt in a special tea cup.
